" Quando studiavo arte culinaria con Simone Beck nella sua casa in Provenza, mi disse alcune cose che non ho mai dimenticato. Un'altra studentessa, insegnante a sua volta di cucina, continuava a interrogarla sulla tecnica con cui operare. Aveva un blocco di appunti dove scriveva furiosamente. Noialtre quattro, invece, eravamo più interessate a mangiare ciò che preparavamo. Fece una domanda di troppo e allora Simone sbottò: Non esiste nessuna tecnica, ma solo un modo di procedere. E adesso vogliamo pesare gli ingredienti o vogliamo cucinare? Qui ho imparato quanto sia liberatoria una tale semplicità. La filosofia di Simone si applica perfettamente a questa cucina: basta passare all'atto pratico senza bisogno di troppe misurazioni. Come sa qualsiasi cuoca, i prodotti di stagione sono la miglior guida.
La maggior parte delle nostre preparazioni è troppo semplice per essere chiamata ricetta: è solo il modo di farle, ecco tutto. "
